前几天有小吃货和我说想吃鱼了
笋笋，你什么时候做鱼吃呀？
笋笋想了想，好像的确没做过鱼哦~
那肯定要满足小吃货的要求啊
所以笋笋就去翻了翻家里的冰箱
嘻嘻(*^__^*) .......
我找到了这群家伙
秋刀鱼
高脂肪、高蛋白
适用于蒸煮煎烤
喵星人的爱
秋刀鱼属于高脂肪、高蛋白的海水鱼类。
其粗脂肪含量高于许多高脂海洋经济鱼类，味道鲜美，所以蒸、煮、煎、烤都可以，具有很好的口感。
秋刀鱼体内含丰富的蛋白质和脂肪等营养物质，秋刀鱼体内所含有的不饱和脂肪酸等有抑制高血压、心肌梗塞、动脉硬化的作用。
记得笋笋以前还是铲屎官的时候，我们家主子可喜欢吃秋刀鱼啦！
每次只要一做秋刀鱼，我们家主子就特兴奋，大概是秋刀鱼腥味比较大，所以坡受主子喜爱吧~
不过我们家大部分是拿来煎着吃。
香煎秋刀鱼味道鲜美，香酥可口。

食 材
秋刀鱼 4只
生姜 一块
椒盐 适量
油 适量
盐 一勺
料酒 两勺
淀粉 适量
步 骤
冰冻的秋刀鱼自然解冻。
解冻的秋刀鱼去腮去内脏，清洗干净。去除鱼的脊梁骨，控干水分，用厨房纸巾把鱼身彻底吸干，再将鱼身切成小段。
当然也可以不要切成小段，去除鱼的脊梁骨后使鱼背仍相连，形成完整的一条鱼。
秋刀鱼段放入大碗中，加生姜末，再加两勺料酒、一勺食盐。
抓均匀，腌制30分钟，以去腥并入味。
腌制后的秋刀鱼段去除姜末，沥干腌制出的水份。
加入适量的淀粉。
抓匀，使每块秋刀鱼段都均匀裹上淀粉。
起锅，倒入适量的食用油。
油温七成热，将秋刀鱼段一块块码入油锅中。
不要急着翻身，用小火慢煎。
煎至鱼身变色，呈现微黄色，这时鱼肉已定型。
翻身，煎鱼身另一面。
小火慢煎，依然将鱼身煎至微黄色。
用锅铲翻动秋刀鱼，避免粘锅。
一直煎，煎至鱼身两面呈现金黄色。
关火，捞出。
控油。晾凉。
摆盘，撒上一些椒盐。
根据个人喜好也可用胡椒、番茄酱等。
香煎秋刀鱼，味道鲜美，香酥可口。
小贴士
1、上好的秋刀鱼形如上好的弯刀，弧度美妙，鱼嘴锋利，鳞片泛着青色，带有月光一样妩媚的明亮光泽。闻其味道，有极淡的腥味。选购时应选肉质紧，眼睛有光泽，鳞片全的比较新鲜。如果鱼身变得涨大，则多为即将变质或已经变质的鱼；从颜色方面辨别，色泽较暗的也是不新鲜的鱼；不新鲜的秋刀鱼吃起来没有鲜度，如同嚼豆腐渣。
2、新鲜的秋刀鱼买回家后如果不马上食用，可沥干水分用保鲜膜包好放在冰箱冷藏室里，尽量1-2天内尽快烹饪。如果放在冷冻室里，则可以保存3个月甚至更久，但滋味与口感都会大打折扣。
3、秋刀鱼是深海鱼，本身带有一定的盐味，不需要过多添加调味，以免掩盖鱼肉本身的鲜味。
4、秋刀鱼腥味较重，用生姜、料酒腌制可以去除一部分的腥味。
5、秋刀鱼切成段后煎比较容易入味，煎熟煎透。当然也可以整只煎着吃，这个看个人喜好。
