小时候的味道，总是让人难忘。
大家都应该吃过那种白白胖胖的白米发糕吧。
记得小学时，每天早上的早餐总会有这么一小块发糕，有时候是圆圆胖胖的小蛋糕状，有时候是一小块菱形状。当然啦，为什么形状不一样，是因为每天买到的都不一样呀。
现在有些早餐铺子虽然还有卖，但是似乎已经尝不出以前那样的味道了，不知是手艺真的不如以前还是缺少了儿时的回忆。
今天呢，笋笋也回忆下小时候的早餐，不过今天不用白米做，今天来点创新，做个黑米的，做出来以后呢，看起来好像煤炭啊，所以笋笋加了点东西，让口感更加适口啦。
食
材
黑米面 300g
酵母 3g
白糖/糖粉 20g
温水 160g
红枣 10颗
黑提 10颗
步骤
红枣洗净去核，一部分切成小片，一部分切碎粒。
黑米面，酵母，糖霜放入大碗中。
再加入切碎的红枣粒。
加适量的温水调制。
水一点一点慢慢加，以免一次性水加太多。
用筷子和均匀，使所有粉料和红枣粒均匀混合。
将面和成一个光滑的面团。
(我的面团看起来是个面团，其实很湿润)
盖上一块温暖的湿布，放在温暖处发酵一小时左右。
发酵至面团两倍大，起一粒粒小颗粒即可。
蒸笼里放上一块湿润的纱布，将发糕倒入蒸笼里。
再将红枣片和黑提均匀贴在黑米面团上。
冷水上锅，大火蒸40分钟左右。
中途不要掀开盖子。(若沸水上锅蒸30分钟左右)
发糕蒸好以后焖五分钟再出锅。
黑米发糕，真的名副其实的黑。
切一块尝尝看。
喧喧软软，香糯可口。
笋笋有话说：
1、发糕可以用糯米粉、大米粉做，也可以尽情开发你的小脑袋做出各种口味、各种颜色的发糕。
2、做发糕的面团稍微湿软一些蒸出来的发糕味道比较好，但是不要太稀。3、面团发酵至两倍大即可，太久会发酵过头发酸。4、如果用模具做，可以在模具内抹上一层油，防粘。蒸好以后不要急着脱模，凉了以后很容易取出。5、可以直接放在蒸笼里发酵，发酵好后直接蒸。蒸笼里记得提前放好屉布。6、蒸发糕的过程中不要中途开盖，以免影响发糕的效果。7、发糕蒸好以后焖几分钟，不要马上开盖，以免回缩。8、发糕若放置到第二天再吃，食用前再回蒸一下，以免太硬。
